Southwest Chicken Salad

Refreshing southwest mix with this salad! This meal is high in nutrients and protein with the combo of beans, veggies, chicken, and yogurt dressing! It's works great for meal prep. You can eat it by itself, with chips, on a green salad, or in a wrap!


Ingredients:

Salad-

5 boneless chicken thighs (can use breasts or tenders)

1 can chickpeas, drained & rinsed

1 can black beans, drained & rinsed

1 can corn, drained

3-4 baby sweet peppers (or any bell pepper, can also add a jalapeno for some spice)

1 tomato

Salt, pepper, cilantro to taste


Yogurt dressing-

1/2 cup plain greek yogurt

2 tbsp lime juice

1/2 tsp garlic powder

1/2 tsp chili powder

1/2 tsp cumin

1/4 tsp salt

2 tbsp warm water


Directions:

Season and cook your chicken thighs however you like! I seasoned mine with green goddess seasoning and hot honey. Then put in the air fryer on 390 for 20-25min, flipping halfway. Let them cool and then chop up!


Drain and rinse your chickpeas and black beans, then add to a bowl. Drain your corn and add it as well. Dice up the peppers and tomato and add that in. Add the seasoning and stir well.


Add in the chopped up chicken and mix that in well.


Add all of the ingredients for the dressing in a bowl. Stir well. The water will help to thin it out. Then drizzle this on the salad and stir well!


You can top this with green onion, cilantro, or avocado. Serve by itself or on a salad. It's also great in a wrap or tortilla chips!
